desert nachos

Serves 2-3

nacho chips

  • 3 flour tortillas
  • 3 tbsp butter, melted
  • 3 tsp sugar
  • ½ tsp cinnamon
  • cooking oil spray

  • 1 banana, sliced
  • ¼ cup chocolate sauce
  • whipped cream

  1. Lay tortillas on a flat surface, brush with butter.
  2. In a small bowl, combine sugar and cinnamon.
  3. Sprinkle cinnamon sugar evenly over the tortillas – you only need to cover one side but if you are looking for extra sweetness, flip them and coat the other side in butter and cinnamon sugar, too.
  4. Use a pizza cutter or a sharp knife to cut the tortillas into wedges. I like to cut my tortillas into 16 wedges per tortilla, but you can cut them any size.
  5. Preheat air fryer to 170C.
  6. Spray the base of your air fryer with cooking oil spray, then add a single layer of tortilla wedges. You will have to do them in batches as you want the hot air pushing around the air fryer for extra crispy wedges, or chips.
  7. Air fry at 170C for 5-6 minutes. Repeat with remaining batches.
  8. Add wedges/chips to a bowl and top with banana, chocolate sauce and whipped cream, or sweet toppings of your choice. You can use anything you have available such as berries, nuts, caramel sauce, biscuits… the options are endless.

Easiest Peanut Butter Cookies

make 12

  • 1 cup smooth natural peanut butter (has to be natural with no added sugar)
  • 2 tbsp maple syrup

  1. Preheat air fryer to 180C.
  2. In a medium-sized bowl, mix peanut butter and maple syrup until fully combined. Then keep mixing until the batter thickens. The batter won’t feel like regular cookie dough but it should become firm enough to shape with your hands.
  3. Line the air fryer basket with some baking paper.
  4. Scoop up roughly 1½ tbsp of dough and place it onto the baking sheet in the air fryer. Repeat with remaining dough, making sure to space the cookies about 5cm apart. You may have to do them in batches, depending on the size of your air fryer. Gently flatten each ball of dough into a disc. And if you are feeling artistic, you can make a pattern on top with a fork or toothpick.
  5. Air fry the cookies at 180C for 7-10 minutes or until the surface of the cookies becomes dry.
  6. Let cookies cool on a piece of baking paper until they are set.

Wagon Wheel Feet

make 4

  • 2 sheets puff pastry, thawed
  • 4 Wagon Wheels
  • 8 marshmallows
  • 2 tbsp butter, melted

  1. Lay puff pastry on a dry surface and cut both sheets into quarters.
  2. Place a Wagon Wheel on top of each of four quarters. Top each Wagon Wheel with two marshmallows and then place the remaining pastry quarters on top and firmly press around the edges to seal.
  3. Using the pointy end of a fork, firmly press around the edges of the pastry to seal further. Cut away any excess pastry and discard.
  4. Preheat air fryer to 200C.
  5. Brush butter over all sides of the feet, including the bottom, then place into the air fryer.
  6. Cook at 200C for 8-10 minutes or until pastry is golden and flaky.
  7. Serve immediately with ice cream.
