Summer is finally here! What better way to celebrate than with delicious roast chicken? Not only is this succulent meal sure to make your mouth water, but it’s also great for any time of year, especially in the summer months when you’re spending more time at home and you might be cooking more often, too. Roast chicken only takes 20 minutes to cook, and with these easy recipes, you can have dinner on the table in no time!
1) Southwestern Lime and Cilantro Glazed Chicken with Avocado
This Southwestern Lime and Cilantro Glazed Chicken with Avocado is the perfect summer dish! The chicken is juicy and flavorful, and the avocado adds a creamy, delicious touch. Plus, it’s so easy to make! Just put everything in a baking dish and let the oven do the work. It’s that simple! It tastes great served on rice or wrapped up in tortillas.
If you want an even easier way to prepare this recipe, you can use canned green chiles and store-bought guacamole for the avocado component. Either way, this chicken will be done before you know it—and when you’re cooking this many dishes at once, that’s a very good thing!
2) Herbed Butter Roasted Chicken with Potatoes
This herbed butter roasted chicken is so easy to make and it’s absolutely delicious! The potatoes are cooked in the same pan, making for an easy one-pan meal. You’ll love the flavors of the fresh herbs in the butter that seep into the chicken and potatoes as they roast. This is the perfect summer meal! It’s quick, low maintenance, and tastes great. I like to serve this with a big green salad on the side. It’s also a perfect weeknight dinner recipe because you can put everything together ahead of time (and then just pop it in the oven when you’re ready).
3) Balsamic and Mustard Crusted Chicken Breasts
1. Preheat oven to 425 degrees F.
2. In a small bowl, whisk together balsamic vinegar, Dijon mustard, and olive oil.
3. Rub the mixture all over chicken breasts. Season with salt and pepper.
4. Place chicken on a baking sheet lined with foil or parchment paper. Bake for 25 minutes, or until cooked through.
5. Remove from oven and let rest for 5 minutes before cutting into it. Serve warm with a side of roasted vegetables or a salad.
4) Pesto Stuffed Chicken Breasts with Couscous
Here’s a great recipe for pesto-stuffed chicken breasts with couscous. It’s easy to make, and it’s the perfect meal for a summer night. The chicken is moist and flavorful, and the couscous is light and fluffy. Plus, the pesto adds a nice zing to the dish. If you’re not a fan of pesto, you can use a different type of herb instead or leave it out altogether. Or try making this recipe with ground beef! You can put your own spin on things by using your favorite herbs or spices in place of the basil.
5) Honey Mustard Chicken Thighs
Honey mustard chicken thighs are the perfect summertime meal. They’re easy to make, require minimal ingredients, and can be cooked in under an hour. Plus, they’re versatile enough to be served as a main course or as part of a larger feast. Just marinate your chicken for 30 minutes before cooking it up, and serve with roasted vegetables, rice pilaf, or pasta salad.
Miso-Glazed Teriyaki Drumsticks: These miso-glazed teriyaki drumsticks are another delicious option for any night of the week—or even if you’re hosting a dinner party! If you don’t have time to marinate your drumsticks before cooking them up, this is also another dish that will cook up in about 45 minutes. For added flavor after cooking (or if you didn’t have time to pre-marinate), add some soy sauce on top and let it cook through while simmering on low heat.
6) Spicy Mango Habanero Baked Sweet Potatoes
This recipe is the perfect blend of sweet and spicy, and the habanero peppers give it a nice kick. The mangoes add a touch of sweetness and the overall flavor is amazing. I like to serve this dish with a side of rice and beans, or you can just eat it as is. It’s an easy recipe to follow and it’s sure to please everyone at your summer gatherings. Enjoy! -Grilled Corn And Avocado Salad: If you love Mexican food, then this is a must-try recipe for you. You might be wondering what the avocado has to do with Mexican food – well there are avocados in guacamole! They’re also in other dishes such as burritos and tacos, so it should come as no surprise that they make an appearance in this salad too. A lot of people love getting fresh corn from their local farmers market during the summer months so now’s your chance to put that corn to good use in one of my favorite recipes.
-Mango Margaritas: Who doesn’t love margaritas? Not only are they delicious but they’re also super refreshing on hot days.
